Our Winter CSA runs from November 2016 through April 2017. Eggs are provided at the Winter Markets the First and Third Saturdays and Sunays of the Month.
Summer CSA information will be posted in March.
Weather plays a huge factor in egg production. During the intense heat of the summer of 2012 we actually ran a generator and had fans running in each of the laying houses so the hens were more comfortable. Egg production still fell because of the heat.
Each year, we cycle out old hens and add new pullets to lay our eggs. We use americanas (blue, green, or pink eggs) naked necks, buff orpingtons, and many production reds because they lay the most eggs (brown)
Eggs are very labor intensive. Besides feeding and watering twice a day, then there are the eggs!
We collect the eggs in flats (pic above) that hold 30 eggs. We collect 180 eggs per day! Eggs have to be washed, candled, weighed, put in cartons, stamped, stickers put on and then boxed for Farmers Markets or Stores. Each day, it takes 2 hours to process eggs!
